Coastal Provisions' Chef Read Wolfe's New Seafood-Centric Seasonal Menu

CHARLESTON, S.C. (April 11, 2018) – Wild Dunes Resort, A Destination Hotel is excited to share its new spring menu at Coastal Provisions, highlighting light and fresh flavors with a focus on sustainable seafood. Open for breakfast, lunch and dinner daily, Coastal Provisions, located in the resort’s Boardwalk Inn, is the ideal place for both locals and visitors, alike to experience upscale dining amidst a welcoming, coastal atmosphere. Those looking to savor the sunshine and near-perfect weather of the Lowcountry in April can also enjoy bites from Coastal Provisions, complimented with refreshing cocktails, poolside, at The Terrace at Coastal Provisions.

Chef Read Wolfe, who has been with Coastal Provisions since it opened in 2016, is the driving force behind the restaurant’s new menu of creative and seasonal dishes. Coming up on a year in his current role as Chef de Cuisine, Chef Read is grateful for the opportunity Wild Dunes Resort affords him to work with fresh and local ingredients, particularly seafood from local purveyors.

“I find most of my inspiration in cooking through the changing seasons and the different products and ingredients that I can put my hands on daily,” shares Wolfe. “Fresh and local ingredients that we purchase through our local farmers and fishermen are so important to curating a great seasonal menu that keeps things new, exciting and flavorful.”

Wolfe’s favorite menu item on Coastal Provision’s new spring menu is the Skillet Pork Chop made with braised spring onions, grilled pickled ramps, heirloom tomato emulsion, smoked gouda and grit cakes. Other seasonal offerings include his Pan Roasted Chicken Breast with Caribbean quinoa salad with pineapple and jalapeno salsa (pictured above) and Fried Green Tomatoes with arugula & kale pesto, spicy buttermilk dressing and a black berry chow-chow.

Hailing from Palm Beach, Fla., Wolf’s passion for cooking started and continues to be fueled by his love for seafood. Utilizing freshly caught fish from his family’s boat, Wolfe learned how to make something out of nothing that tasted delicious. Coastal Provisions’ new menu features a rotating daily fish entrée, giving diners the opportunity to experience something new with every visit.

“I love creating an incredible meal for guests, but I also love providing them with an outstanding experience that they will remember and talk about for years to come,” said Wolfe.
