Culinary Series Kicks Off

Innovative The Study of…Culinary Series Kicks Off at Vermont’s Stowe Mountain Lodge

First gastronomic experience features Atlantic Salmon

The chefs of the Destination Hotels Culinary Collection have created The Study of… Culinary Series, and each quarter will unveil a new gastronomic topic for their chefs to examine through cooking demonstrations, educational lectures, innovative recipes and sumptuous tastings each quarter

Salmon fishing as a child with his dad in Maine, Chef Berry can remember, “hooking a 15-pound Atlantic salmon that, as far as I can remember was as big as me.” That experience informs his proficiency in cooking the “King of Fish”, the first ingredient highlighted in The Study of…Culinary Series.

Atlantic salmon make a tremendous journey during their lifetime, migrating from fresh water streams to feeding grounds in the north Atlantic Ocean and back again to spawn. They are among the most beautiful and powerful of fish, and, perhaps most importantly, are a symbol of clean, unspoiled waters. Wild salmon is a nutritional powerhouse, free of contaminants and placing among the top ten healthiest foods. It has been directly linked to cancer prevention and to a significant reduction of cardiovascular problems.

Experience the deliciousness of The Study of Salmon at Solstice, Stowe Mountain Lodge’s AAA Four Diamond restaurant, by feasting on a three-course, all-salmon menu, including Cured Salmon, Preserved Salmon Confit, and Pan Seared Salmon Fillet.
