Seasonal Summer Dishes by Chef Dunlap

Ah, summer!

A time to relish in all things outdoors and indulge in delish meals cooked with inspiring ingredients at our Richmond, VA restaurant located downtown.

Executive Chef, David Dunlap of Maple & Pine restaurant at Quirk Hotel recently shared some of his inspiration for his summer season dishes.

“One of the ingredients I look forward to most is vine ripened tomatoes. In my opinion, there are few things better than a tomato ripe and in season. Here at Maple and Pine our tomatoes come almost exclusively from Village Garden right outside Richmond, Virginia. They grow 150 different types of Heirloom tomatoes and pick them the morning of delivery. You can still feel the heat from the sun on them. This year one of the dishes we will be featuring is an Heirloom Tomato Tart with Basil Custard, Georgia Olive Oil and West Virginia Sea Salt.”
