Seattle’s Premier Independent Hotel Is Proud to Announce the Expansion of the Food & Beverage Team Who Bring a Fresh, Local Perspective to the Guest Dining Experiences at Frolik Kitchen + Cocktails
— April 2, 2018 — Motif Seattle is pleased to announce the newest members of its food and beverage team who oversee the award winning rooftop bar and restaurant, Frolik Kitchen + Cocktails
. The forward-thinking team is comprised of Food & Beverage Director Max Messmer, Executive Chef Laura Simpson-Eng and Bar Manager Chris Blakeslee. Messmer, Blakeslee and Simpson-Eng are joined by existing Restaurant Manager Tatyana Konyakhina and Sous Chef, Chris Balaoro, who are dedicated to creating trend-forward and unique dishes, offering guests a twist to the traditional Northwest cuisine.

Together, the team has successfully launched a refreshed, Northwest-inspired breakfast, dinner, happy hour and two cocktail menus. The team has further elevated Frolik Kitchen + Cocktails’ food and beverage program by bringing out bold flavors with noteworthy ingredients in all offerings. Frolik Kitchen + Cocktails will debut its new Millionaires Menu with five extravagant, specialty cocktails this week featuring the $200 Best Martini Ever, $280 Beauty in Paradis and the $128 Mogul’s Margarita.
Additionally, the culinary team is responsible for seasonally reimagining menu offerings at the hotel’s conference and events facilities, which are among Seattle’s largest and most in-demand.
Messmer, a Washington native, brings over 20 years of restaurant and hospitality experience in to the food and beverage team including roles in Washington, Hawaii and Florida. Messmer is well positioned to execute his vision under the Motif Seattle name and has built out programs highlighting local Seattle flavors, wines, beers by tapping into regional purveyors and partners in Seattle and around Washington.
Motif Seattle also welcomes Chef Simpson-Eng, who brings a fresh perspective and new energy to the F&B team as Executive Chef. Simpson-Eng comes armed with over 20 years of experience in the restaurant industry, previously working as the Executive Sous Chef at L'Auberge Del Mar, A Destination Hotel, Ritz Carlton Hotel Company and The Hotel Hershey. She expresses her passion for the Pacific Northwest in her dishes; showcasing that a meal can be more than just a collection of ingredients, but an experience. She has combined unique flavors and exotic ingredients to develop the new menus and corresponding dishes such as the Roasted Romanesco, Uli’s Merguez and Manchego Fondue, Gerard & Domonique Smoked Fish Board, classic Pacific Northwest staples like oysters, Wild King Salmon, crab and scallops and desserts like Masala Chai Brulèe, Marion Berry S’mores.
The team is joined by Blakeslee, who has bar and nightlife experience throughout the Pacific Northwest. Blakeslee possesses a strong pulse on cocktail and beverage trends, having developed exotic recipes that are unique to Frolik Kitchen + Cocktails, including a seasonal menu of libations for guests to enjoy this Spring and Summer. He is focused on rum-forward beverages, like the Pina Romero and Café de Ron, along with a creative-yet-contemporary line of cocktails highlighting citrus, cold brew, savory herbs and other bold flavors.
