The Inn and Spa at Loretto’s dynamic Food and Beverage team is the key to its culinary success. Their focus is on innovative menus, fresh ingredients and consistently exceeding guest’s expectations. Their attention to detail and commitment to quality service has helped ensure our restaurant, catered events and bars remain among the best in Santa Fe.

Anthony Smith, Executive Chef

Executive Chef Anthony Smith started his career as an apprentice at the age of 16 in London and has since served as Executive Chef at The Westin Park Central & Sheraton Park in Dallas, Executive Chef at The Westin Atlanta North in Atlanta and Executive Sous Chef at The Westin La Paloma Resort & Spa in Tucson, Arizona. Smith graduated from The City & Guilds of London with a degree in Culinary & Patisserie Arts and Hotel and Restaurant management. Smith served as the Executive Chef at The Westin Stonebriar Resort in North Dallas and oversaw the opening of The Sheraton Stonebriar.

James Buckley, Dining and Outlets Manager

James began his journey in hospitality from humble beginnings, working as a grill chef at a truck stop outside London, UK. His passion has since taken him to three continents and positions at Michelin starred properties across the US, including the fabled French Laundry (Worlds Best Restaurant 2004 -San Pellegrino). His experiences continue to inspire him to this day to create memorable dining experiences in his long time home of Santa Fe.

Salma Rascon, Assistant Restaurant Manager

Salma’s broad hospitality experience has brought her from housekeeping supervisor, banquet server, bartender to banquet captain. She’s worked in various hotels such as Inn of the Anasazi, La Fonda, Eldorado and now Inn and Spa at Loretto where she is the Assistant Restaurant Manager. Salma’s computer skills and food & beverage experience are an asset to the operation. She enjoys her staff and working with the guests to ensure they have a personal, positive experience.

Aniel Chavry, Food and Beverage Supervisor

Aniel is originally from Mauritius, a tiny island in the southern Indian Ocean about halfway between Africa and Australia. It is most famous as the former home of the Dodo bird, but is also home to many amazing hotels and resorts. This is where Aniel first began working in the hospitality industry at Club Med. She has traveled all over the world, but now calls Santa Fe home and has been working at the Inn and Spa at Loretto since 2015. She has also worked for the Four Seasons Rancho Encantado. Aniel is passionate about food and wine and has been a very active member for the local chapter of Chaine des Rotisseurs, the world’s oldest food & wine society.

Mara Burns, Food and Beverage Supervisor

Mara Burns is a Santa Fe native who got her start in the restaurant business 23 years ago. Her love of adventure and culture took her to 5 different cities in the U.S. where she worked in a variety of restaurants from fine dining to donut shops. Working almost every role from busser, host bartender and manager gave her the experience to see how all the moving parts work together to keep the engine of the restaurant running. Mara wanted to expand her wine knowledge and for the past year has worked for a wholesale distributor specializing in selling boutique and organic wines from around the world. When she saw the opportunity to work at one of the most beautiful properties in the southwest, she jumped at the chance to join the team at the Inn and Spa at Loretto.

Selvin Hernandez, Banquet Manager

Selvin has worked in the banquet and catering industry for over twenty years. He has previously held positions as banquet server and banquet captain in various large scale Hotels, Casinos, and a Private Country Club. Selvin excels in providing exceptional service and guiding his team. Selvin has a degree in accounting.
