We had the pleasure of catching up with Chef Guy Hercules from Station Kitchen & Cocktails, who shared with us his cooking approach, menu items he’s most proud of, and favorite ingredients to cook with. 

What do you love most about your job, and working at The Embassy Row Hotel?
I enjoy the sincere appreciation I receive from my boss, the interaction with my staff, and the guest.

Could you describe your cooking approach?
I like to do simple things when cooking, like using basic ingredients including herbs that represent a Mediterranean-style cuisine (which is my favorite).

What are some of the menu items you’re most proud of, and why?
Mumbo Peanuts and Stuffed Surf and Turf Burger, because these are my personal creations and people loved them! They are still very popular menu items to this date.

What are your favorite ingredients to cook with?
Herbs, garlic, and butter. For me, these three simple ingredients elevate the cooking experience.

What culinary trends do you see, based on what your customers are ordering and requesting?
The D.C. market is diversified – from low-carb and gluten-free food to vegan requests!

How do you like spend your downtime in D.C.?
I enjoy going to the gym or biking along trails.
