A Recipe for Lime in the Coconut (Milk)

An easy recipe for a delicious mocktail

As as playful nod to the classic Harry Nilsson song, this mocktail, called Lime in the Coconut (Milk), was developed by Caitlin Hula, the talented beverage manager at Cliff House Maine. Though it only features a few ingredients, it’s extremely flavorful, and will transport you to a warmer, more tropical destination after just one sip.

Ingredients
4 oz. coconut milk
2 oz. kumquat simple syrup
0.5 oz. lime juice
candied kumquat
soda water
fresh lime zest
cayenne pepper

Directions
Shake the first three ingredients in a shaker tin with ice. Double strain the mixture into a chilled coupe glass. Top with soda water and garnish with a candied kumquat, fresh lime zest, and a pinch of cayenne pepper.
