While many counterparts rely on rice and bean flour, Nuflours uses a special blend of millet, sorghum, tapioca and potato to make everything taste moist and delicious. In addition to offering a range of sweet and savory treats daily, the bakery also offers custom cakes and frozen goods to go.
Acclaimed pastry chef Toby Matasar – she trained in Paris and York before landing in Seattle in 2000 – makes it her mission to create truly delicious, healthful cuisine that happens to be gluten-free. To that end, Niche’s menu features a wide selection of tantalizing options for breakfast and lunch, including avocado and bacon toasts, salmon hash bowls, and turkey reubens. The vibe inside is cheerful and casual, making it an ideal nook for a quick, but satisfying bite.
