Celebrate National Margarita Day!
In honor of National Margarita Day, Caitlin Hula, Cliff House’s Beverage Manager, has shared fun and easy-to-follow recipe you can whip up at home. Of why Hula loves this particular cocktail called the Southern Daisy, “The slight sweetness you get from infusing the tequila with pineapple and agave is the initial taste, and then the spiciness of the jalapeños and cilantro cut through–making for a delicious drink that has the perfect balance of sweet and spice.” And if you want even more kick, Hula recommends muddling some jalapeño before shaking the drink.
Recipe for Southern Daisy
2 oz pineapple infused tequila*
1 oz cilantro, jalapeño syrup*
½ oz lime juice
¼ oz agave
½ oz triple sec
Combine all ingredients with ice into a shaker tin. Shake and strain into a rocks glass filled with ice. Garnish with pineapple wedge and pineapple leaf.
*To make cilantro, jalapeño syrup:
Heat one cup of sugar and one cup of water in a saucepan. Stir mixture over heat until all sugar has dissolved. Add one cup of cilantro leaves and one sliced jalapeno to the mix, bring to a boil. Remove from heat and let cool for 15 minutes. Strain syrup.
*To make pineapple infused tequila:
Cut one full pineapple into chunks (remove skin) and add to one 750 mL bottle of tequila. Let the infusion sit for 72 hours. Strain tequila and store into an airtight container.
