Even though Charleston’s Peninsula Grill didn’t invent the coconut cake, it certainly created the ultimate one. How ultimate, you ask? Imagine 12 alternating layers of moist, buttery cake and fluffy coconut filling – all of which is finished with a thick layer of cream cheese frosting and toasted coconut flakes. The entire cake weighs in at a whopping 12 pounds, with each slice clocking in at approximately one full pound. The indulgent dessert debuted in 1997 under the restaurant’s first executive pastry chef Esthi Stefenelli, and was so beloved it eventually got its own trademark for the “Ultimate Coconut Cake.” If you want a slice of heaven, but aren’t in the Charleston area, no worries.
