Over Memorial Day weekend, Resort at Squaw Creek unveiled their recently remodeled restaurant, Montagna, along with a fresh, Italian-driven menu by the newly-appointed chef Patrick Cleary. Below, he reveals what he loves about working at Squaw Creek, his approach in the kitchen, and his favorite menu item.
What do you love about working at Resort at Squaw Creek?
The Team members I have make me feel like I am home and belong.
How would you describe your cooking style?
Modern American with a classical influence.
What’s your favorite menu item?
The linguine vongole because it reminds me of my childhood in New England. I’d go digging for clams with my friends, then come home and cook them with linguine for everyone.
What are your favorite local ingredients to work with?
The produce in this area is amazing. I always get excited when I get some produce so fresh it still has the dirt from the farm on it.
How do you like to spend your free time in the area?
Hanging out with my dog, and exploring the mountains.
