Celebrate National Pecan Cookie Day
In honor of National Pecan Cookie Day – which is celebrated September 21st – The Carolina Inn and its newly-hired pastry chef, Annika Loureiro, will be offering freshly-baked North Carolina Pecan Chocolate Chip Cookies at the front desk as a complimentary treat for its hotel guests. An irresistible combination of pecans – did you know North Carolina is one of the country’s top producers of the wholesome nuts? – Heath Bar pieces, chocolate chips, and brown sugar, these cookies bake up golden brown, chewy, and melt-in-your-mouth delicious.
If you can’t make it up to The Carolina Inn, though, no worries. Chef Loureiro has kindly offered to share her recipe below. Time to get baking!
North Carolina Pecan Chocolate Chip Cookies
Ingredients (makes 42 cookies)
10 oz. Butter
8 oz. Sugar
8 oz. Brown Sugar
1 tsp. Vanilla Extract
1 lb. 2 ½ oz. All Purpose Flour
1 ½ tsp. Salt
1 ½ tsp. Baking Soda
7 oz. Chocolate Chips
5 oz. Heath Bar Pieces
4 oz. Toasted Pecans
Sift together flour, salt, and baking soda. Set aside.
Using a standing or handheld mixer, cream together butter, brown sugar, and sugar for two minutes.
Add the eggs and vanilla to the butter-sugar mixture, and then incorporate the flour, salt, and baking soda.
Add the chocolate chips, Heath Bar pieces, and toasted pecans.
Scrape the bowl to ensure all ingredients have been blended together. Be careful to not overmix the cookie dough.
Scoop dough onto a cookie sheet, and bake at 300°F for 10 to 12 minutes.
