Whatever your reason for giving up gluten, we’ve got good news. Aspen and Snowmass, two of the most popular winter destinations in the US, have several terrific restaurants that have your needs covered.

Pyramid Bistro is a city staple owned by chef Martin Oswald. His mission? To prove that healthful, nutritionally-sound food can be absolutely delicious, too. Even better? Most everything Oswald prepares is gluten-free.

At the positively pretty Spring Cafe, founder Sabrina Rudin specializes in organic and plant-based cooking. There’s plenty of hearty gluten-free items on the menu, including veggie meatloaf, sweet potato burgers, and nachos.

The vibe at Matsuhisa Aspen, the subterranean spot by acclaimed chef Nobu Matsuhisa is low-key with its bamboo-lined ceilings and sushi bar made from salvaged wood. All the sushi and sashimi can be prepared gluten-free, and the restaurant also offers a separate gluten-free menu if raw seafood isn’t your preference.
