Pyramid Bistro is a city staple owned by chef Martin Oswald. His mission? To prove that healthful, nutritionally-sound food can be absolutely delicious, too. Even better? Most everything Oswald prepares is gluten-free.
At the positively pretty Spring Cafe, founder Sabrina Rudin specializes in organic and plant-based cooking. There’s plenty of hearty gluten-free items on the menu, including veggie meatloaf, sweet potato burgers, and nachos.
The vibe at Matsuhisa Aspen, the subterranean spot by acclaimed chef Nobu Matsuhisa is low-key with its bamboo-lined ceilings and sushi bar made from salvaged wood. All the sushi and sashimi can be prepared gluten-free, and the restaurant also offers a separate gluten-free menu if raw seafood isn’t your preference.
