Baca, a restaurant infused with Spanish inspired Colorado cuisine features dishes of Colorado-range bison and stream-fresh fish. Headed by Executive Chef Anthony Sinese, Baca’s cuisine is prepared and served in a traditional Spanish manner, and embodies cooking of Castilian origins, a favored Colorado technique.
Blending tradition with modernity, Baca’s menu showcases the locally raised and grown products and produce that make Colorado famous, while allowing diners to experience traditionally Spanish style cuisine. Diners can choose from small plates incorporating heirloom tomatoes, smoked chevre and trumpet mushrooms with pequillo peppers, to entrees of Colorado rainbow trout, Black Angus filets and Colorado racks of lamb.
