Glazed Whiskey & Grapefruit Chicken Recipe

For the grapefruit:
1 Grapefruit
1 cup whiskey
½ cup grapefruit juice

Segment the grape fruit and cut each segment in half, marinate the grapefruit with whiskey and juice for 2 hours and strain the liquid and reserve for the sauce.

For the Chicken:
Clean 8 6 ounce chicken breasts, sprinkle with salt and pepper then hold for service

2#’s spinach washed and blanched
12 oz. Basmati Rice steamed ready for service

For The Sauce:
3 oz. olive oil
1 oz. Shallots
1 cup whiskey & ½ cup of grapefruit juice from marinate
2 oz. whole butter
1 oz. of Vanilla Vodka
1 Pinch of Nutmeg
S&P to taste

Procedure:

Heat a skillet and add the 3 oz. olive oil, sauté the chicken breast add the salt, pepper and pinch of nutmeg. Ensure both sides of the chicken get caramelized (golden brown color) cook for 2.5 minutes on each side, remove and hold. Add the shallots to the remaining oil, once the shallots are translucent add the grapefruit segments. Cook very quickly on high heat for about 1 minute, add all alcohol and juice, reduce by 2/3 as the liquid reduces it will thicken, add the chicken and any liquid that has collected into the pan for 1 to 2 minutes which should finish cooking the chicken as well as coat it. Remove the chicken, add the butter to the sauce stirring as the butter melts and spoon the sauce and grapefruit over the chicken. This chicken is best served with sautéed spinach and steamed basmati rice.
